A low carb dinner idea.
Chickpea pasta is made from chickpeas ground into a flour. It it is great to be used as a low-carb option. Because they are higher in fibre, they tend to digest slower and help you feel fuller for longer.
It may taste a little different, but still good. It's will have more of a nuttiness nature to it.
With this recipe, it is so simple and quick so it make it a great mid-week meal. Feel free to each it as it is, or add some extra green vegetables, or high protein meats to build this up. Use this as a nice base, and grow in whichever way you like.
Preparation time: 5 minutes - Cook time: 10 minutes - Serves: 1
You will need:
- 75g Chickpea noodles - 1.5 tbsp peanut butter
- 1 tbsp chilli oil - 2 tbsp soy sauce
- 1 tbsp sweet black vinegar - 1 garlic clove, grated
Method:
Place the noodles on to boil.
In a bowl, mix in the peanut butter, chilli oil, soy sauce, vinegar and garlic until a smooth paste forms.
Add in two tablespoons of the noodle water into the bowl until it thins into a sauce.
Add noodles and stir, garnishing with chopped green onions. Serve.
