Salmon poke bowl


Healthy protein mixed with strong flavours!

Celebrate summer with a colourful, healthy salad poke bowl. The mix of spice and sweetness make this meal the perfect summer dinner.


Salmon is packed with protein, and mixed with the selection of vegetables we've chosen here create a brilliantly balanced meal with many nutrients and flavours needed for a healthy lifestyle.


If you have other vegetables kicking around in your fridge, this is a great dish to use those up. Just add them into the mix.




Preparation time: 45 minutes - Cook time: 10 minutes - Serves 2

You will need:

- Wild caught salmon (skinless) - 1 tbsp sesame oil

- Soy sauce (to taste) (no added refined sugar) - ¼ cucumber

- ½ cup cabbage - ½ medium avocado

- 2 tbsp vegan mayonnaise - Seasonings to taste


Method:

Gather ingredients and prepare to preference, dicing and slicing the salmon, avocado, cabbage and cucumber.


Place the salmon in a separate bowl and season with sesame oil, soy sauce and salt. Set aside to marinate.


In a bowl, place the cucumber, avocado and cabbage.


In a separate bowl, mix together the mayonnaise and soy sauce (adding any other seasonings of your choice) and drizzle over the prepared vegetables.


Add the marinated salmon to the bowl and enjoy!
