Lemon and raspberry ice lollies

A taste of summer.

When the weather is sunny, sometimes all you want is something sweet and cold, and these simple ice lollies can be the best solution for that craving.

These delicious ice lollies have a sweet nature, but with the sugar substitute it means the calories are nothing to be alarmed by.

Don’t waste any time, these are so quick to make so get started now!

Preparation time: 5 minutes - Freeze time: 3 hours - Serves 6

You will need:

- Juice from ½ a lemon - 100g raspberries

- 1 cup coconut milk (unsweetened) - 5 tbsp coconut oil

- ½ cup vegan double cream - 20 drops liquid stevia (or suitable alternative)


Add all ingredients into a blender safe container.

Blend until the raspberries are fully mixed into the rest of the ingredients.

Strain the mixture to remove the raspberry seeds.

Pour the lolly mixture into moulds and freeze for a minimum of 3 hours.
