Ham and Mushroom Omelette

We understand what it is like in the morning, you're rushing around trying to get everything and everyone ready for the day and breakfast is the last thing on your mind. But a simple omelette is not only a great source of protein and flavour it is also quick to make, and can be eaten cold if you wanted to take it into the office!



Preparation time: 2 minutes - Cooking Time: 8 minutes - Serves: 1

You will need:

- 1 tsp oil (avocado) - 80g chestnut mushrooms , sliced

- 50g sugar free ham , diced - 80g bag spinach

- 4 medium eggs , beaten - 1 tbsp grated cheddar



Method:

With the grill on its highest setting, heat the oil in an ovenproof frying pan. Tip in the mushrooms and fry for 2 mins until mostly softened.


Stir in the ham and spinach, and cook for 1 min more until the spinach has wilted. Season well with black pepper and a pinch of salt.


Reduce the heat and pour over the eggs. Cook undisturbed for 3 mins until the eggs are mostly set.


Sprinkle over the cheese and put under the grill for 2 mins. Serve hot or cold.
