Cashew Ice Cream


A rich and creamy take on ice cream.

You may not know but cashews nuts make for a super thick and rich ice cream that is pretty darn close to the real thing.


This dairy-free take on ice cream can be made into any flavour you want, but here we show you a nice simple berry idea.


Preparation time: 20 minutes - Cook time: 35 minutes - Serves 2-3

You will need:

- 1 cup organic cashews (soaked in water over night) - 1/3 cup of lime juice and zest

- 1/2 cup full fat organic coconut milk - 4 tablespoons of raw coconut oil

- 1/3 cup of agave syrup - 1 handful of mixed, fresh berries

- (*Silicone molds)



Method:

Put all ingedients into a high speed blender and mix until smooth & creamy.


Place some berries in all of the silicone molds and fill up with the cashew mixture.

Gently tap them on the table to make bubbles of air rise to the surface.


Put them in the freezer for several hours.


Remove from the silicone mold before serving and decorate the plate with some fresh berries / fresh mint leaves / edible flowers.


Serve.
